  • We are looking for a leadership-driven, highly organized Kitchen Manager to oversee our culinary operations.

Named for the high-quality red spring wheat we source right here in the Upper Midwest, we take immense pride in our old-school craftsmanship—meticulously crafting our Artisan, Neapolitan, and Detroit-style pizza dough entirely by hand. The final result of our labor-intensive process is anything but traditional. Our kitchens are ingredient-driven, complex in flavor, and crafted with unwavering intent to deliver one of the Twin Cities’ most memorable pizza experiences.

As Kitchen Manager, you will be the driving force behind this vision, balancing exceptional culinary execution with the business acumen required to run a smooth, efficient, and profitable BOH operation across our locations.

    Your Responsibilities

    • Uphold Craftsmanship: Ensure the team executes our labor-intensive, from-scratch recipes perfectly—from hand-pulling mozzarella and making house ricotta to prepping our signature scratch sausage and complex sauces (like our house mushroom cream).

    • Team Leadership & Development: Recruit, hire, train, and schedule back-of-house staff. Cultivate a positive, collaborative, and accountable kitchen culture that treats pizza craft with the respect it deserves.

    • Operations & High-Volume Execution: Oversee daily prep and line execution. Ensure consistent quality, complex flavor profiles, and flawless crust integrity during high-volume service rushes.

    • Financial Stewardship: Manage food cost percentages, inventory control, and BOH labor budgets. Keep waste to an absolute minimum while utilizing premium, locally sourced, stone-milled heirloom ingredients.

    • Safety & Compliance: Enforce strict health, safety, and sanitation standards. Maintain a pristine kitchen environment fully compliant with local health department regulations.

What You’ll Bring to the Table

    • Experience: 3+ years of experience as a Kitchen Manager, Sous Chef, or Head Cook in a high-volume, scratch-heavy restaurant environment. Pizzeria or artisan dough experience is highly preferred.

    • The "Details" Mindset: A passion for fine-dining standards applied to a comfortable, community-focused pizza concept. You care about the difference between a good pizza and a great pizza.

    • Financial & Logistical Literacy: Proven ability to manage restaurant P&L, food costing, vendor relations, and BOH labor scheduling.

    • Certifications: ServSafe Manager certification required.

    • Physical Demands: Ability to stand for long periods, work around high-heat deck and wood-fired ovens, and lift up to 50 lbs (hello, flour bags).

    Why Join Us?
This is a fantastic opportunity to work with one of the most respected artisan pizza operations in the Twin Cities.

    • Competitive base salary range: $25–$30 (including tips)

    • Performance-based bonus opportunities.

    • A supportive, creative work environment with opportunities to grow alongside a uniquely expanding local brand.
